Smoothie Bar: Easy Peasy Mango Sorbet

Sugar madness is no joke, but it will have to be addressed next week. Today it’s over 100 degrees out and my 6-months-pregnant self wants to share something a little simpler for your long holiday weekend…

 

For our first dispatch from the Smoothie Bar, allow me to offer this delicious frozen treat that tastes decadent but has nothing but good fat and great antioxidants…

Easy Peasy Blender Sorbet (serves 2)

You’ll need:

2 cups of frozen mango

½ cup water

¼ cup coconut milk

Juice of one small lime

One fresh or frozen banana

To make:

Soften the mango just a bit. Chop everything small and pop all ingredients into a blender. (I use and love this one, which is apparently an “as seen on TV” special, but don’t judge. It’s fast, BPA-free, and easy as pie to clean.)

Serve it now, a bit soft, or pour into a container that you can freeze. I like to garnish mine with fresh mint or a couple of fresh blueberries. Yummy stuff!

Variations:

Add a teaspoon of nutmeg, cinnamon, or ginger for a more warming flavor.

Add additional water, juice, or coconut milk and freeze into BPA-free popsicle molds

Switch up your fruit. This recipe is easy and delicious with any berry or tropical fruit.

For those who prefer a bit more sweetness, add a teaspoon or two of organic maple syrup. (Use Grade B for higher nutrient content.)
