As the weather gets cooler I’m experimenting with warm and nourishing breakfast foods to replace my staple summer smoothies without adding any grains or dairy. This porridge features sweet autumn apples and it’s paleo, vegan, warming, nutritious, anti-inflammatory, and seriously delicious. I hope you like it.
Warm your non-dairy milk in a heavy pot on a stove top (2 to 3 minutes, no need to boil it). Add the remaining ingredients and use an immersion blender to process until smooth. Optional: Top with coconut flakes and add a few berries.
You could sub hemp protein for the flax meal, or use berries instead of an apple if you wish. If you are pressed for time you can also eat this porridge cold with refrigerated non-dairy milk, but for better digestion and nutrient absorption I recommend eating it warm.
